Description
Puttu Podi is a specially prepared rice flour mixture used to make Puttu, a popular breakfast dish in the South Indian states of Kerala, Tamil Nadu, and parts of Sri Lanka. Puttu is a steamed rice cake often served with side dishes like Kadala curry (black chickpea curry), banana, or even with non-vegetarian fare like fish curry.
The Puttu Podi is generally made by grinding soaked and dried rice into a fine powder. Sometimes, the rice is roasted before grinding to enhance the flavor. The prepared powder can be stored for extended periods and used as needed. Some commercial versions of Puttu Podi also include additional ingredients like grated coconut or spices, but the most traditional version is just made of rice.
How to Use Puttu Podi:
- Moistening: The Puttu Podi is usually moistened with water and salt to achieve a crumbly texture.
- Layering: The moistened flour is layered with grated coconut in a cylindrical Puttu maker.
- Steaming: The Puttu maker is placed atop a pot of boiling water, and the Puttu is steamed until cooked.
The result is a soft, fluffy, and moist steamed rice cake that pairs wonderfully with a variety of accompaniments.
